Coating enzyme are endonucleases that hydrolyze the α-1,4 glycosidic linkages of starch, soluble dextrins and oligosaccharides, but not the α-1,6 glycosidic linkages. The viscosity of the gelatinized starch can be rapidly decreased and become liquefied starch, yielding soluble dextrins and oligosaccharides containing α-1,6 bonds.
