Grainzm AA 4.0 T is a kind of bacterial α-amylase. Bacterial α-amylase works out by randomly cutting the α-1,4-glycosidic bond from within the substrate molecule to produce maltose, a small amount of glucose, and a series of oligosaccharides and dextrins with varying relative molecular weights.
