Brzyme GA is a glycosylase, an exonuclease that hydrolyses the α-1,4-glycosidic bond one by one from the non-reducing end to produce glucose, and also slowly hydrolyses the α-1,6-glycosidic bond to convert it into a straight-chain polysaccharide.
